Are you aware that Wikipedia has a place collecting resources designed  
to help all teachers? http://en.wikipedia.org/wiki/Wikipedia:School_and_university_projects

You also mention that many of your students' articles were deleted; I  
address this particular problem in my teaching with Wikipedia workshop
